Elizabeth Coffey received a masters degree in education in 2008. Upon graduation, she accepted a job at SEM that eventually led to her to become the athletic director for two years and a residential director for two years. She left SEM to pursue her dream of serving her country by helping others when she joined the Peace Corps. Lizz served in Ghana as a health, water and sanitation volunteer. She helped to build a medical clinic, taught ESL, offered health education to young mothers and ran a health-based youth organization within her village. When she returned, she continued to serve by joining Americorps as a Teach for America volunteer. She taught biology and anatomy and physiology in a rural public school in St. Stephen, South Carolina. When her service ended, she returned to her hometown of Buffalo, and has been managing wellness centers since. Elizabeth is very excited about returning to SEM and integrating back into the community.
